Pumpkin Bread


3 c Self Rising Flour
3 c Sugar
1 tbsp Pumpkin Pie Spice
4 Eggs
15 oz can Pumpkin
1 c Vegetable Oil
1/3 c Orange Juice
1 tsp Vanilla
1 c Chopped Pecans, divided
Preheat oven to 350 degrees. Grease and flour 2 9x5 loaf pans. Mix flour, pumpkin spice in a large bowl, set aside. Beat eggs in a medium bowl. Stir in pumpkin, oil, orange juice, and vanilla. Add to flour mix just until moistened. Stir in half cup pecans. Divide batter evenly between loaf pans. Sprinkle top of each loaf with remaining pecans. Bake until toothpick comes out clean, about 30-35 minutes.
